In practice it means traceable beans (usually a single farm or region), careful processing, and roasting that highlights origin character instead of hiding it. Only a small share of the world's coffee qualifies.
01the actual definition (not the marketing one)
"Specialty" has a technical meaning. Green coffee is sampled and cupped by licensed graders; it has to score 80+ out of 100 and stay under strict defect counts to qualify. Below that line, coffee is commodity grade — the anonymous, blended stuff most of the world drinks. Words like "gourmet," "premium," and "artisanal" have no standard behind them. Specialty does.
