Every bag is roasted to order in Berkeley, CA the week it ships — never dark enough to mask the bean's natural characteristics or leave it oily. Your coffee ships within 24 hours of roasting. The roast date is on every bag. Wait at least 4 days after roast before pulling your first shot.
