coffee society journal — home espresso
Light roasts are denser than dark roasts and give up their flavor more slowly, so they need a little more help: a finer grind, hotter water, a longer shot, and more patience. On a Decent, a gentle preinfusion and easing off the pressure through the shot does half the work for you. Start with 18 g of coffee to 45 g of espresso at 94–96°C, and change one thing at a time.
01the starting recipe
light roast espresso · starting point
Ratio means coffee in to espresso out: 18 g of grounds makes 45 g of espresso. On a Decent, start at low pressure for the first few seconds, rise to about 8 bar, then let the pressure ease off through the shot. On a Linea Mini or any machine with fixed pressure, the ratio and temperature do that job instead — that's fine.
02the levers, in order
Change one thing per shot. If you move two, you won't know which one worked, and light roasts punish guessing more than any other coffee I roast.
03troubleshoot by taste
04rest matters more than anything
Light roasts hold on to their roasting gas longer than darker roasts. The same bag that gushes and sprays at day 5 can pull like silk at day 18. Because we roast to order and print the date, you know exactly where your bag is on that curve — plan your dial-in for the second and third week, and the coffee meets you halfway.
05common questions
Usually the shot didn't pull enough out of the beans, not the roast itself: light beans need a finer grind, hotter water, and a longer shot than the recipe you used for a medium roast.
Lower and gentler than the classic 9 bars helps — around 6–8 bars, with a soft start, keeps water flowing evenly through dense, light-roasted coffee.
No — pressure control makes it easier, not possible. Fresh beans, a good grinder, and the recipe above get you most of the way on any serious home machine.
